Vegetarian Pizza.

Vegetarian Pizza

Ingredients:

1 large store-bought, ready-made plain pizza base

¾ cup pizza sauce

1⅔ cups (150g) Perfect Italiano Perfect Pizza cheese

Handful of sliced zucchini

Handful of sliced button mushrooms

Handful of sliced green, red and yellow capsicum

4 green pitted olives, sliced

Method:

Preheat oven to 230°C/210°C fan-forced. Line a baking tray or pizza tray with baking paper.

Place pizza base on lined tray. Spread with the pizza sauce. Scatter with a small handful of pizza cheese. Top with zucchini, mushroom, capsicum and olives. Scatter over the remaining cheese.

Bake for 10-15 minutes or until cheese is melted and golden and base is crisp.

Tip: This classic vegetarian pizza recipe features zucchini, mushrooms, capsicums and olives. Add marinated artichokes for an extra flavour hit.

Barbecue Chicken Pizza

Barbecue Chicken Pizza.

Ingredients:

1 large (30cm) pizza base

⅓ packet of Perfect Italiano Perfect Pizza cheese

1 medium size chicken breast (about 200g)

2 tsp olive oil

3 tbsp barbecue sauce

1 shallot

4 Swiss brown mushrooms

170g marinated capsicum

1 tbsp thyme leaves

Method:

Preheat the oven to 250°C.

Place the olive oil in a large frying pan over a medium-high heat. Add the chicken and cook for 5 minutes on each side or until browned and cooked through. Transfer the chicken to a plate, cover with foil and allow to rest for 5 minutes. Once rested, slice into thin strips or roughly shred.

Spread the barbecue sauce over the pizza base. Sprinkle over ¾ of the cheese to evenly cover the base. Top with the chicken, mushrooms, shallot, capsicum and thyme leaves. Sprinkle over the remaining cheese.

Bake for 10 minutes or until the cheese melts and the base becomes crispy.

Tip: If you want to make this pizza even simpler try using leftover roast chicken or cooked barbecue chicken from your supermarket instead of cooking the chicken breast.

Mixed Mushrooms and Pancetta Pizza

Mixed Mushrooms and Pancetta Pizza.

Ingredients:

2 tbsp olive oil

300g mixed mushrooms

2 cloves garlic

3 tsp thyme leaves

⅓ packet Perfect Italiano Perfect Pizza cheese

1 large (30cm) pizza base

4 slices pancetta

Method:

Preheat the oven to 250°C.

Heat the oil in a large frypan over a medium-high heat. Add the mushrooms and fry for 6-8 minutes or until golden brown. Remove from the heat, season and stir through the garlic and thyme. Set aside.

Meanwhile, sprinkle over the cheese to evenly cover the pizza base. Top with the pancetta, and place the pizza into the oven for 4-5 minutes until cheese is melted.

Once the cheese has melted, remove the pizza from the oven and top with the mushroom mixture. Return to the oven for another 8-10 minutes or until the base becomes crispy.

Remove from the oven and serve immediately.
